Think this fruit bar is like the regular fruit bars you buy at the supermarket? Think again, because believe me, you may just be thinking in the wrong direction. This fruit bar will surprise you, especially knowing that there is no sugar in it. This bar is sweetened with only fruits.
Inspired to make some Fruit Bars
Now you would notice that last month I did a sugarless cake, also sweetened with only fruits. This month I have a delicious fruit bar, and if you want to add other ingredients to make it sinfully tempting, I’d say go ahead and do that – at least after you have tried the recipe this way first.
Fruit Bars Recipe
Anyhow, this recipe calls for a number of fruits, so make sure you buy enough for the amount you want to make or your fruit bar will taste a bit plain. I also noticed that this fruit bar tasted best when cool or even better the day after. I can’t explain it but it just tastes better. You will only know how good it tastes until you make your own fruit bar. So here is my healthy fruit bars recipe. Enjoy!
FRUIT BARS
- 1 1/3 c rolled oats
- 1 c chopped dates
- 3/4 c enriched flour
- 1/4 c wheat flour
- 1/2 c unsalted butter
- 1/2 c walnuts or almonds or peanuts
- 1/2 c chopped dried apricots
- 1/4 c oil
- 2 eggs, beaten
- 1 1/2 tsp baking powder or 1 tsp. baking soda
- 1 tsp. vanilla
- 3/4 tsp. cinnamon
- 1/4 tsp. nutmeg
In saucepan, melt butter and add the oil.
Add dates and apricots. Stir then remove from heat and set aside to cool.
In the mean time, combine dry ingredients.
Beat the egg and vanilla together.
Add to the fruit mixture…
then pour over the dry ingredients. Mix well.
Pour in a greased baking dish (9×13 inch pan). Bake in an oven for 20 min at 350 degrees F.
Cool and cut. Serve cool.
