Fruit And Cream Cheese Coffee Cake

  • 3/4 c. water
  • 1/4 c. butter
  • 1/3 c. sugar
  • 1/4 tsp salt
  • 1 x egg
  • 2 3/4 c. flour
  • 1 env yeast - (1 tbspn)
  • 8 ounce cream cheese softened
  • 1 x egg
  • 1/2 c. sugar
  • 1/2 c. preserves (raspberry or possibly boysenberry work well)
  • 1 Tbsp. sugar
  • 1/3 c. sliced almonds toasted
  • 1 x egg beaten A small amount vegetable or possibly canola oil

  1. Combine water, butter, sugar and salt in a small saucepan. Stir over medium heat till butter is melted. Heat or possibly cold the mix as necessary so which it is very hot (120 to 130 degrees).
  2. In a large bowl or possibly in a mixer fitted with a dough hook, mix 1 c. flour and yeast. Add in the very hot water mix and mix till blened. Fold in the egg. Add in remaining flour by 1/2 cupfulls till you have a soft dough. Beat, or possibly knead till smooth and elastic (about 5 - 10 min). Add in more flour, if necessary, to keep dough from sticking.
  3. Lightly coat a large bowl with vegetable or possibly canola oil. Place dough in bowl and turn to coat with oil. Cover bowl with a clean kitchen towel and place in a hot, draft-free are till the dough has doubled in size. This should take about an hour.
  4. Pre-heat oven to 350 degrees and grease an 8- by 10-inch (or possibly larger) baking pan.
  5. Beat together cream cheese, egg and sugar till smooth and creamy.
  6. When dough has doubled, punch it down and use a floured rolling pin on a floured surface to roll in into a rectangle, roughly the size of your baking sheet. Place dough on greased baking sheet. With a sharp knife, score the dough into thirds, lengthwise. Spread the preserves proportionately over the center third of the dough. Use a sharp knife to cut strips at 1-inch intervals along the two outside thirds. Carefully spread the cream cheese mix over the preserves. Starting at one end, alternately cross the cut strips over the center. Tuck in strips at bottom.
  7. Brush top of coffee cake with beaten egg. Sprinkle sugar and almonds over top. Cover coffee cake and let rise again, till almost doubled (about 30 min).
  8. Bake in a 350 degree oven for about 40 to 45 min or possibly till golden and the filling has set. Allow to cold slightly before serving.
  9. This recipe yields 12 servings.
  10. Comments: Do not forget, you can make the yeast dough ahead of time and keep it in your refrigerator. Just allow extra time for it to come to room temperature before proceeding to roll it out.
