- Combine first four ingredients till well coated with butter. Press into bottom of molds. Chill.
- Combine 1 c. sugar and fromage blanc in large bowl, whisk over a warm water bath till sugar has dissolved. Squeeze all water out of gelatin sheets and add in to hot fromage mix, stir till gelatin has dissolved. Cold slightly over a water bath till slightly thickened. Whip yolks in mixer with second c. of sugar till thick and pale, fold into fromage mix.
- Mix in whipped cream. Fill 4-inch ring molds, smooth tops and refrigeratetill set.
- Yield: 10 servings
- Serve with strawberry mint salsa.
