%3C/p%3E%3Cp%3EAnyway,%20it%20was%20a%20good%20thing%20that%20we%20celebrated%20the%20occasion%20one%20week%20earlier,%20as%20we%20will%20be%20celebrating%20another%20occasion%20this%20coming%20weekend.%3C/p%3E%3Cp%3EI%20am%20no%20good%20at%20frosting%20a%20cake,%20so%20I%20always%20have%20to%20rely%20on%20other%20ingredients%20to%20make%20the%20cake%20'presentable'.%20Canned%20peaches%20happen%20to%20be%20one%20of%20the%20few%20fool-proof%20ingredients%20I%20have%20been%20using%20on%20countless%20occasions.%3C/p%3E%3Cp%3EAlthough%20I%20have%20made%20a%20mango%20yoghurt%20cake,%20my%20lack%20of%20skills%20have%20prompted%20me%20to%20fall%20back%20on%20peach%20slices...again!%3C/p%3E%3Cp%3EVery%20much%20inspired%20by%20Small%20Small%20Baker's%20mango%20yoghurt%20ice%20cream,%20I%20wasted%20no%20time%20to%20try%20making%20it%20once%20I%20got%20hold%20of%20all%20the%20necessary%20ingredients.%20Thanks%20to%20the%20blender%20which%20I%20have%20been%20hoarding,%20I%20was%20able%20to%20make%20my%20first%20homemade%20ice%20cream!%20It%20was%20so%20delicious%20and%20simple%20to%20prepare%20that%20I%20adapted%20the%20same%20ice%20cream%20recipe%20to%20make%20the%20fillings%20for%20this%20layered%20cake%20;)%3C/p%3E%3Cp%3EI%20liked%20the%20way%20the%20cake%20has%20turned%20out...the%20filling%20tasted%20almost%20similar%20to%20the%20ice%20cream%20version,%20light%20and%20refreshing!%20The%20layering%20was%20quite%20even%20as%20I%20was%20diligent%20enough%20to%20use%20a%20measuring%20cup%20to%20measure%20out%20equal%20amount%20of%20filling%20for%20each%20layer.%20I%20would%20have%20added%20chunks%20of%20fresh%20mangoes%20in%20between%20the%20fillings%20if%20I%20had%20any%20spare%20mangoes.%20I%20am%20sure%20it%20will%20make%20this%20cake%20even%20more%20delicious.%3C/p%3E%3Cp%3EPeach%20&%20Mango%20Yoghurt%20Cake%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3E(makes%20one%2018cm%20cake)%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3ETo%20make%20the%20sponge%20cake:%3C/p%3E%3Cp%3ESift%20cake%20flour,%20set%20aside.%20Line%20the%20sides%20and%20bottom%20of%20an%2018cm%20(7%20inches)%20round%20pan%20with%20parchment%20paper,%20set%20aside.%20Pre-heat%20oven%20to%20170degC.%20Position%20rack%20at%20the%20lower%20bottom%20of%20the%20oven.%3C/p%3E%3Cp%3EWith%20an%20electric%20mixer,%20whisk%20eggs%20and%20sugar%20on%20HIGH%20speed%20for%20about%205%20to%207%20mins,%20until%20the%20batter%20double%20in%20volume%20and%20is%20ribbon-like%20(the%20beater%20should%20leave%20a%20ribbon-like%20trail%20when%20the%20batter%20is%20lifted%20up).%20Turn%20to%20LOW%20speed%20and%20whisk%20for%20another%201%20to%202%20mins.%20Whisking%20at%20low%20speed%20helps%20to%20stabilise%20the%20air%20bubbles%20in%20the%20batter.%3C/p%3E%3Cp%3EAdd%20sifted%20cake%20flour%20into%20the%20batter%20in%203%20separate%20additions.%20Gently%20fold%20in%20the%20flour%20with%20a%20spatula%20each%20time%20the%20flour%20is%20added.%20Take%20care%20not%20to%20deflate%20the%20batter.%3C/p%3E%3Cp%3EAdd%20the%20melted%20butter,%20fold%20with%20spatula%20until%20well%20blended%3C/p%3E%3Cp%3EAdd%20in%20fresh%20milk,%20vanilla%20extract%20and%20fold%20in%20gently%20with%20spatula.%3C/p%3E%3Cp%3EPour%20the%20batter%20into%20the%20pan%20and%20bake%20for%2030~35%20mins,%20or%20until%20a%20skewer%20inserted%20in%20the%20centre%20comes%20out%20clean.%20Unmold%20and%20invert%20onto%20cooling%20rack,%20remove%20parchment%20paper%20and%20let%20cool%20completely.%3C/p%3E%3Cp%3ETo%20make%20the%20filling:%3C/p%3E%3Cp%3EMeasure%20water%20into%20a%20bowl%20and%20sprinkle%20in%20the%20gelatin%20(without%20stirring%20with%20a%20spoon).%20Set%20aside%20to%20allow%20the%20gelatin%20grains%20to%20swell%20(10%20mins)%20before%20setting%20the%20bowl%20over%20a%20pot%20of%20simmering%20hot%20water.%20Stir%20with%20a%20spoon%20and%20once%20the%20gelatin%20melts,%20remove%20the%20bowl%20from%20the%20pot%20and%20set%20aside%20to%20cool%20to%20room%20temperature.%3C/p%3E%3Cp%3EBlend%20mangoes,%20sugar,%20yoghurt%20until%20the%20mixture%20becomes%20smooth.%3C/p%3E%3Cp%3EWith%20an%20electric%20mixer,%20whisk%20non-dairy%20whipping%20cream%20till%20stiff.%20Fold%20in%20the%20whipped%20cream%20to%20the%20mango%20mixture.%20Blend%20thoroughly.%3C/p%3E%3Cp%3EIf%20desired,%20remove%20about%201%20cup%20of%20the%20above%20mixture,%20set%20aside%20to%20use%20for%20piping.%3C/p%3E%3Cp%3EAdd%20in%20the%20gelatin%20solution%20to%20the%20remaining%20mixture,%20mix%20well.%3C/p%3E%3Cp%3ETo%20assemble:%3C/p%3E%3Cp%3ESlice%20the%20cake%20horizontally%20into%203%20layers.%20For%20each%20layer,%20trim%20away%20the%20sides%20by%20about%202~3mm,%20so%20that%20the%20resulting%20layers%20are%20slightly%20smaller%20than%2018cm.%20(This%20is%20to%20make%20sure%20the%20mango%20filling%20can%20cover%20the%20sides%20of%20the%20sponge%20layer.)%3C/p%3E%3Cp%3EPlace%20one%20layer%20of%20the%20sponge%20cake%20in%20an%2018cm%20round%20pan%20with%20a%20removable%20base%20(or%20use%20a%20cake%20ring%20or%20springform%20pan).%20Spread%20about%201.5%20cups%20of%20mango%20filling%20on%20the%20sponge%20layer.%20Repeat%20with%20the%20second%20layer%20of%20sponge%20cake,%20followed%20by%20the%20filling.%20Place%20the%20last%20layer%20of%20sponge%20cake%20and%20spread%20the%20remaining%20filling%20on%20the%20surface%20evenly.%20Gently%20tap/bang%20the%20pan%20on%20the%20table%20to%20remove%20any%20empty%20air%20pockets%20in%20between%20the%20sponge%20layers%20and%20the%20filling.%20Leave%20the%20cake%20to%20chill%20in%20the%20fridge%20for%20at%20least%203%20~4%20hours.%3C/p%3E%3Cp%3ERemove%20cake%20from%20fridge,%20unmold%20and%20decorate%20as%20desired%20(pipe%20rosettes%20or%20borders%20using%20the%20reserved%20mango%20filling%20in%20step%2010).%20Keep%20the%20cake%20in%20the%20fridge%20before%20serving.%3C/p%3E%3Cp%3E(Note:%3C/p%3E%3Cp%3E*This%20cake%20can%20be%20made%20with%20a%2020cm%20(8%22)%20pan,%20the%20resulting%20cake%20will%20be%20slightly%20shorter.%3C/p%3E%3Cp%3E**To%20arrange%20the%20peach%20slices%20as%20what%20I%20have%20done,%20start%20by%20arranging%20the%20outer%20ring%20of%20peach%20slices.%20To%20make%20the%20rosette%20in%20the%20middle,%20slice%20peach%20slices%20till%20very%20thin.%20Arrange%20these%20thinly%20sliced%20peaches%20in%20concentric%20circles...work%20from%20the%20outside%20towards%20the%20inside.%20The%20outermost%20peaches%20will%20provide%20support%20for%20the%20inner%20ones%20to%20prevent%20it%20from%20sliding.%20Hope%20I%20am%20clear%20with%20my%20description.)%3C/p%3E){kind=link}
