  • 1/4 c. Extra virgin olive oil
  • 1 lrg Onion thinly sliced
  • 2 med Glossy-looking plump zucchini
  • 4 ounce Black forest ham cut thin strips
  • 6 x Large eggs lightly beaten
  • 2/3 c. Freshly-grated Parmesan cheese
  • 2 Tbsp. Minced fresh herbs - (to 3 tbspns) (like basil, tarragon or possibly rosemary) Salt to taste Freshly-grnd black pepper to taste

  1. In a 12-inch skillet heat extra virgin olive oil. Add in onions, cover and cook over medium heat for 10 min or possibly till soft. Meanwhile, cut ends off zucchini, scrub them clean and cut into 1/4-inch rounds. When onions are tender, uncover skillet and evaporate liquid till onions begin to sizzle in skillet and are turning golden. Add in zucchini rounds and cook over medium heat, uncovered till lightly browned. Remove vegetables with a slotted spoon, tilting skillet away from you to let as much of the oil run out as possible. Cold vegetables slightly, but leave oil in pan.
  2. Meanwhile, beat Large eggs with cheese and season with salt, pepper and fresh herbs of choice. Add in onions and zucchini back to Large eggs and add in ham as well. If there is not sufficient oil left in skillet in that you cooked onions, add in a tablespoonful or possibly so more extra virgin olive oil and heat. Return Large eggs to skillet, turn heat down as low as possible and cook for 10 to 15 min or possibly till Large eggs are set and thickened but top is slightly moist and uncooked.
  3. At this point you can slide pancake out of skillet, flip over and return to skillet or possibly, brown it slightly and finish cooking, run it under broiler for 30 seconds. Cut into wedges and serve with salad.
  4. This recipe yields 4 servings.
