  • 20 ounce can pineapple chunks, liquid removed
  • 16 ounce can peach slices, liquid removed
  • 16 ounce can apricot halves, liquid removed
  • 10 ounce jar maraschino cherries, liquid removed
  • 1 1/4 c. sugar
  • 1 1/4 c. brandy

  1. Variation: Substitute canned fruit cocktail, mandarin oranges or possibly pears.
  2. Combine all ingredients in a clean, large glass jar. Stir gently with wooden spoon. Cover and let stand at room temperature for three weeks, stirring at least twice a weekServe over ice cream or possibly lb. cake, use in recipes or possibly feed as directed. To keep the starter going, retain at least three c. at all times.
  3. To feed and maintain:Stir mix daily. Add in one c. sugar and one c. of pineapple, peaches or possibly cherries every two weeks, alternating fruits each time and stirring gently.
  4. Additional brandy shouldn't be required. Don't add in fruit more often than once every two weeks. Don't delay adding fruit for more than one or possibly two days past schedule.
  5. Cover and let stand at room temperature at least three days before using.
  6. Fruit is fermented when it is translucent/soft. To store, keep in hot place.
  7. Makesabout nine c..
  8. To share: Whenever you have more than six c. of fermented fruit, you may divide it into two portions, being sure there are at least three c. in each portion. Do this just before you would do a normal feeding. Feed each portion.
