- Season the tuna with salt and freshly grnd pepper on both sides.
- Heat the oil in a large saute/fry pan over medium heat.
- Cook the tuna for 3-4 min on both sides till cooked through. Let sit for 10 min. Using a fork, flake the tuna and place in a large bowl.
- Add in the onion, celery, and cornichon and stir to combine. In a small bowl, whisk together the mayonnaise, vinegar, and lemon juice, season to taste with salt and pepper and pour over the tuna.
- Mix in the dressing till combined, season with salt and pepper to taste and add in the parsley and thyme.
- Serve on slices of country bread with lettuce and sliced tomato.
