- In a large saucepan fold in the extra virgin olive oil, garlic, sliced mushrooms, herbs, mussels, clams, langoustines, cockles, winkles, white wine, crab and fish stock and cover and simmer for 10 min.
- Add in the saffron, lobster and more extra virgin olive oil, stock, white wine and seasoning, again cover and simmer for 10 min.
- Serve on a bed of pasta and top with chargrilled scallops.
