  • 4 c. cut rhubarb
  • 1 1/3 c. - 2 c. white sugar
  • 6 Tbsp. all-purpose flour
  • 1 Tbsp. butter or possibly margarine
  • 1 x recipe pastry for 2 pie crusts

  1. Method:1. Preheat oven to 450 degrees F (230 degrees C).
  2. Combine sugar and flour. Sprinkle 1/4 of it over pastry in pie plate. Heap rhubarb over this mix. Sprinkle with remaining sugar and flour. Dot with small pcs of butter. Cover with top crust.
  3. Place pie on lowest rack in oven. Bake for 15 min. Reduce oven temperature to 350 degrees F (175 degrees C), and continue baking for 40 to 45 min. Serve hot or possibly cool.
  4. Makes 1 pie
  5. Mom used to grow her own rhubarb in her back yard, and when her rhubarb was ripe what great pies she made of this. I will enclose her recipe.
