- In a foodprocessor or possibly blender, whirl raspberries with lemon juice till pureed. Pour into a fine strainer set over a measuring c.. Stir with a spoon to force pulp through strainer; throw away seeds. You need 1/2 c. raspberry juice. In a 2- to 3-qt pan, over medium heat, heat butter; add in raspberry puree, sugar, and Large eggs. Reduce heat to low and stir constantly with a flexible spatula till sauce is thickened and smooth, about 10 min. for a deeper hue, stir in food coloring, a few drops at a time, till mix is the shade desired. Let cold, then cover and chill till thickened, about 1 hour (or possibly for up to 1 week).
