%20Anyway,%20I%20will%20be%20making%20my%20way%20back%20to%20Vancouver%20soon%20and%20will%20resume%20to%20posting%20more%20new%20recipes%20soon.%20Have%20a%20good%20week%20ahead%20:)%3C/p%3E%3Cp%3ERecipe%20adapted%20from%20Baking:%20From%20My%20Home%20To%20Yours%20by%20Dorie%20Greenspan%3C/p%3E%3Cp%3EFresh%20Mango%20Bread%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EMethod%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20350%CB%9AF.%3C/p%3E%3Cp%3EButter%20an%208%20%C2%BD%20x%204%20%C2%BD-inch%20loaf%20pan,%20dust%20the%20inside%20with%20flour%20and%20tap%20out%20the%20excess.%20Put%20the%20pan%20on%20an%20insulated%20baking%20sheet%20or%20on%20two%20regular%20baking%20sheets%20stacked%20one%20on%20top%20of%20the%20other.%20(This%20extra%20insulation%20will%20keep%20the%20bottom%20of%20the%20bread%20from%20overbaking.)%3C/p%3E%3Cp%3EWhisk%20the%20eggs%20and%20oil%20together.%3C/p%3E%3Cp%3EIn%20a%20large%20bowl,%20whisk%20together%20the%20flour,%20sugar,%20baking%20powder,%20baking%20soda,%20spices%20and%20salt.%20Rub%20the%20brown%20sugar%20between%20your%20palms%20into%20the%20bowl,%20breaking%20up%20any%20lumps,%20and%20then%20stir%20it%20in.%20Pour%20the%20wet%20ingredients%20over%20the%20dry,%20switch%20to%20a%20sturdy%20rubber%20spatula%20or%20wooden%20spoon%20and%20mix%20until%20blended-the%20batter%20will%20be%20very%20thick%20(really%20more%20like%20a%20dough%20than%20a%20batter)%20and%20not%20easily%20mixed,%20but%20persevere,%20it%20will%20soon%20come%20together.%20Stir%20in%20the%20mango,%20raisins%20and%20zest.%20Scrape%20the%20batter%20into%20the%20pan%20and%20smooth%20the%20top%20with%20a%20rubber%20spatula.%3C/p%3E%3Cp%3EBake%20the%20bread%20for%201-%C2%BD%20hours,%20or%20until%20it%20is%20golden%20brown%20and%20a%20thin%20knife%20inserted%20into%20the%20center%20comes%20out%20clean.%20(If%20the%20bread%20looks%20as%20if%20it%E2%80%99s%20getting%20too%20brown%20as%20it%20bakes,%20cover%20it%20loosely%20with%20a%20foil%20tent.)%20Transfer%20the%20pan%20to%20a%20rack%20and%20cool%20for%205%20minutes%20before%20running%20a%20knife%20around%20the%20sides%20of%20the%20pan%20and%20unmolding.%20Invert%20and%20cool%20to%20room%20temperature%20right%20side%20up%20on%20the%20rack.%3C/p%3E){kind=link}
