  • 6 slc Bacon
  • 6 x Ears fresh corn
  • 1/2 c. Minced green pepper
  • 1/2 c. Minced onion
  • 1 tsp Salt
  • 1/8 tsp Pepper
  • 2 x Fresh tomatoes, peeled and sliced

  1. In a large skillet, cook bacon till crisp. Remove from skillet, drain on paper towels and crumble. Remove all but 2 Tbsp. bacon fat from skillet. Cut corn from cobs. Add in corn, green pepper and onion to bacon fat.
  2. Cook over high heat for 5 min. Add in crumbled bacon, salt and pepper. In a 2 qt casserole, alternate layers of the corn mix and tomato slices. Bake, uncovered, at 350 for 30 to 40 min, till corn is tender.
  3. Yield: 6 servings.
