- Heat the oil in a large pan and add in the onions and garlic, cook till the onions begin to soften.
- Add in the potato and stock to the pan.
- Meanwhile cook the broad beans in boiling water for about 5 min.
- Bring the soup to the boil and simmer for 20 min. Add in the beans and stir.
- Leave the soup to cold then add in the lemon juice, cream and mint. Puree till smooth.
- Season to taste.
- Garnish with mint leaves.
