%20during%20the%20weekends%20when%20there%20is%20no%20need%20to%20rush.%20It%20is%20during%20these%20days%20when%20I%20make%20them%20some%20delicious%20pancakes%20from%20scratch%20with%20some%20fruit%20filling%20or%20some%20yummy%20French%20Toast.%3C/p%3E%3Cp%3EOccasionally,%20my%20husband%20would%20make%20us%20French%20Toast%20or%20what%20he%20calls%20Eggy%20bread%20-%20he's%20Brit%20so%20he'd%20rather%20call%20it%20Eggy-bread%20(but%20it's%20essentially%20what%20we%20think%20of%20as%20French%20toast)%20and%20he%20really%20makes%20a%20good%20one%20so%20I%20know%20I'd%20be%20up%20to%20a%20challenge%20if%20I%20make%20him%20and%20the%20tots%20the%20more%20French%20version.%20So%20one%20Sunday%20morning%20during%20summer,%20I%20was%20up%20early%20and%20decided%20to%20make%20some%20French%20Toasts%20and%20use%20up%20some%20summer%20berries%20that%20were%20still%20available.%20This%20is%20essentially%20what%20I%20made.%20I%20wasn't%20sure%20if%20hubby%20and%20the%20tots%20would%20like%20it%20at%20all%20but%20thankfully%20the%20verdict%20was%20good!%20All%208%20slices%20of%20French%20Toasts%20were%20eaten%20and%20the%20berry%20compote%20perfectly%20mopped%20from%20the%20plate!%20I%20call%20that%20successful!%20Enjoy%20this%20for%20breakfast%20or%20brunch!%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3E*Taste%20the%20fruit%20compote%20and%20adjust%20the%20sweetness%20to%20your%20preference.%3C/p%3E%3Cp%3E*If%20using%20frozen%20berries,%20no%20need%20to%20thaw%20as%20you%20will%20heat%20it%20up%20anyway.%3C/p%3E%3Cp%3E*I%20used%20whole%20wheat%20bread%20so%20the%20bread%20looks%20brown%20in%20the%20photo.%20Use%20what%20you%20prefer.%3C/p%3E%3Cp%3EProcedure%3C/p%3E%3Cp%3ECombine%20the%20sugar%20and%20the%20lemon%20juice%20with%201/4%20cup%20water%20in%20a%20saucepan.%20Heat%20until%20the%20sugar%20is%20dissolved.%20Stir%20in%20the%20fruit%20and%20bring%20to%20a%20boil.%20Reduce%20the%20heat%20and%20simmer%20for%2010%20minutes%20or%20until%20the%20fruits%20are%20softened%20but%20still%20retain%20their%20shape.%20You%20may%20have%20to%20cook%20a%20little%20longer%20if%20you%20are%20using%20frozen%20berries.%3C/p%3E%3Cp%3EStrain%20the%20fruit%20and%20put%20the%20remaining%20liquid%20in%20a%20small%20saucepan%20with%20the%20honey.%20Bring%20to%20a%20boil.%20Stir%20it%20well%20and%20cook%20for%20about%2010%20minutes%20or%20until%20it%20has%20a%20syrupy%20consistency.%20Place%20the%20fruits%20in%20a%20bowl%20and%20pour%20the%20honey%20mixture%20over%20and%20stir%20being%20careful%20not%20to%20break%20the%20fruits%20too%20much.%3C/p%3E%3Cp%3EIn%20a%20large%20mixing%20bowl,%20whisk%20together%20the%20eggs,%20cream,%20and%20the%20spices.%20Divide%20the%20butter%20into%20about%208%20little%20pieces%20(same%20number%20as%20the%20bread).%20Depending%20on%20how%20big%20your%20pan%20is,%20melt%20as%20many%20butter%20pieces%20as%20the%20bread%20slices%20you%20can%20accommodate%20on%20your%20frying%20pan%20over%20medium-low%20heat.%20I%20just%20do%202%20at%20a%20time.%20Dip%20the%20bread%20slices%20in%20the%20egg%20and%20cook%20for%20about%202-3%20minutes%20per%20side,%20or%20until%20golden%20on%20both%20sides.%20Repeat%20the%20process%20for%20the%20remaining%20bread%20and%20butter.%20You%20can%20place%20the%20cooked%20bread%20in%20the%20oven%20heated%20at%20250F%20to%20keep%20it%20warm.%3C/p%3E%3Cp%3EPlace%20two%20slices%20of%20French%20toast%20on%20a%20plate,%20dust%20with%20a%20little%20confectioner's%20sugar%20and%20serve%20with%20some%20of%20the%20fruit%20compote%20on%20top%20and%20on%20the%20side.%20Enjoy%20a%20delicious%20fruity%20breakfast%20all%20year%20round!%3C/p%3E%3Cp%3EIf%20you%20like%20what%20you%20see%20and%20would%20like%3C/p%3E%3Cp%3Eour%20site.%20Also%20do%20like%20us%20in%20Facebook%20so%20you%20can%20get%20the%20latest%20updates%20and%20so%3C/p%3E%3Cp%3Emuch%20more.%20Thanks%20for%20visiting%20and%20happy%20browsing!%3C/p%3E){kind=link}
