French Toast

For a delicate summer desert - fresh, light and full of flavor – try this twist on an old favorite. The Sake Sabayon is a wonderful surprise on the season’s best fruits - a treat made even more special with a dollop of ice cream!

  • French Toast
  • 4 slices brioche
  • 2 eggs
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1 ounce heavy cream
  • Sake Sabayon
  • 1/2 cup sake
  • 1/2 cup sugar
  • 8 egg yolks
  • 2 tablespoons clarified butter
  • Summer Berries
  • 8 ounces fresh summer berries (You can use diced tropical fruits as well.)
  • 6 mint leaves, finely shredded

  1. To make the sabayon, you will need a whisk, a nonreactive metal bowl and a saucepot large enough so the bottom of the metal bowl can sit in it, but not too deep. You will want to put some simmering water in the saucepot and then set the bowl with the sake, sugar and egg yolks in it; it should fit perfectly. Whisk vigorously until the eggs form ribbons and thicken, but no longer. It should have a raw taste. Set aside in a warm place.
  2. For the French toast, you will need another nonreactive bowl, a whisk and a nonstick pan. Remove the crusts from the brioche. If you prefer, you can cut the bread into a specific shape, such as a circle, using a cookie cutter or even the top of a glass. In a nonreactive bowl, combine the cream and cinnamon. Whisk until there are no lumps, then add the eggs and vanilla. Whisk again. Place the pan on the heat and add clarified butter. When hot, dip the brioche in the egg batter on both sides then cook in the pan until golden brown on both sides. Remove and set on an absorbent towel.
  3. Sprinkle the French toast with powdered sugar. Place on a serving plate, arranging the berries attractively on the French toast. Coat with the sabayon, then garnish with fresh mint.
