Рецепт French Onion Grilled Cheese
I’ve been hosting weekend guests at my home for the past few weekends. I’m not talking hosting my husband – yeah, he’s been visiting too (what a trooper, driving 5 hours a weekend to see me!), I’m talking about real, honest to goodness, guest-bedroom visitors.
I like it a lot. I love having company, since I live alone. And I love showing off our property. And I love feeding all the people. I even love doing the dishes (almost).
This past weekend, our visitor was arriving just at lunch time. I knew she’d be hungry and I knew I wanted something quick and easy to serve up. We all loved these grown up grilled cheese sandwiches I concocted. Our guest, in fact, was the one who named them … quickly likening this meal to French Onion soup.
I made the onion jam filling a few hours before mealtime and kept it in the refrigerator until lunch. I toasted one side of each piece of bread in the broiler. When the guests arrive, I added the cheese to untoasted side of half the bread slices and onion jam to the other half. After broiling for 2 or 3 minutes, everything was perfectly warm and melty for serving.

French Onion Grilled Cheese
- Onion Jam (recipe follows)
- sourdough bread pieces
- provolone cheese
- for the jam (Elly Says Opa)
- 2 tsp. butter
- 2 large yellow onions, thinly sliced
- 2 Tbsp. brown sugar
- 1/3 cup red wine
- 1/3 cup balsamic vinegar
Heat the butter over medium heat and then add the onions. Cook the onions, stirring occasionally, for about 15 minutes. Add the sugar and a pinch of salt, and cook for an additional 10-15 minutes until deeply golden brown. Stir in the red wine and balsamic vinegar. Continue cooking until the liquid has been absorbed and the mixture has thickened, about 10-15 minutes.
Under oven broiler, toast one side of the bread slices. Flip bread over and top have the slices with 1 or 2 slices of cheese and the other have with 1-2 T onion jam. Broil until cheese is melted. Put slices together to form sandwiches. Serve.
