French Onion Bread Pudding

  • 1 1/2 lb onions (2 to 3 medium onions), sliced thinly (750 g)
  • 1 tsp sugar (5 mL)
  • 3 tsp kosher salt (15 mL)
  • 3 Tbsp. clarified butter (45 mL)*
  • 1 Tbsp. sweet sherry (15 mL)
  • 1 x large Italian or possibly French bread loaf, crusts removed, cut into 5 by 1-inch (13 by 2.5-cm) pcs
  • 6 x Large eggs
  • 2 c. heavy cream (500 mL)
  • 1 Tbsp. grainy mustard (15 mL)
  • 1 tsp finely minced thyme (5 mL)
  • 1 tsp freshly grnd black pepper (5 mL)
  • 2 c. grated Gruyere cheese (500 mL)

  1. Preheat the oven to 350 degrees F (180 degrees C).
  2. In a large skillet, saute/fry the onions, sugar, and 1 tsp. (5 mL) of the salt in the clarified butter over medium-high heat; stir constantly to prevent burning. Cook till golden. Add in sherry and stir to lift any caramelized onion on the bottom of the pan. Set aside.
  3. Spread out the bread pcs proportionately on a baking sheet. Put in the oven for about 5 to 8 min to dry the bread slightly without colour. Set aside to cold.
  4. Whisk together the Large eggs, cream, mustard, thyme, remaining salt, and pepper. Soak the bread in the egg mix for 5 min.
  5. In a casserole dish, layer the bread with the onions and cheese. Pour the remaining egg mix over the top.
  6. Bake for 35 min or possibly till the egg mix is set.

  9. Note: clarified butter is unsalted butter which has been slowly melted, separating the lowfat milk solids from the liquids. After removing any foam off the top, the golden brown butter is poured or possibly skimmed off the milky residue. Clarified butter is used to cook at higher temperatures because it has a higher smoke point.
