French Dip
I know that I have posted many a french dip recipe, but I love them all and keep making different variations that I just have to share! As most french dips go, this one is very easy and cooks up great in your crockpot. It’s great for a busy weeknight meal and takes minimal prep time in the morning before work. Win-win in my book…
French Dip
Ingredients:
- 1- 3 pound beef roast
- 2 tablespoons olive oil
- Salt & pepper
- 2-1 ounce packages dry onion soup mix
- 2 cups water
- 2 cans beef broth
Directions:
Heat olive oil in a large pot over medium-high heat and sear the meat on sides. You aren't trying to cook the meat, here, just get some nice color.
Place the meat in the crockpot. Add the soup mix, water and beef broth over the roast.
Cover and cook on LOW for 8-10 hours or on HIGH for 4-5 hours and additional 3 hours on LOW. The longer it cooks, the more tender the meat is.
When the meat is done, shred it using 2 forks. Serve on toasted buns with a slice of provolone cheese on top. We also like to add sauteed onions and peppers.
