- To one half Basic Dough, fold in 1 c. finely minced red candied cherries. Cover, refrigerateat least 2 hrs.
- Heat oven to 375 degrees. Roll dough 1/8 inch thick on well-floured cloth-covered board. Cut into 2-inch circles or possibly scalloped rounds. Cut small hole in center of half the rounds. Bake on ungreased baking sheet 8 to 10 min or possibly till very light brown. Cold. Spread plain rounds with Almond Filling: Blend 2 c. confectioners' sugar, 1 tsp. almond extract, 1 1/2 to 2 Tbsp. lowfat milk and, if you like, few drops food color. Top each with cut-out round.
- Makes about 2 dozen.
- Yield: 2 dozen
