  • 2 lb Frankfurters, boiled (I use Armour All-Beef franks)
  • 20 ounce Broccoli spears (frzn), cooked
  • 12 ounce Corn (canned), liquid removed
  • 20 ounce Cauliflower (frzn), cooked
  • 6 lrg Potatoes, diced and cooked (approx.)
  • 1 lb Cheddar cheese, sliced

  1. Thinly slice franks (18-20 slices per frank). Break cauliflower into bite sized florets. Separate broccoli into individual spears.
  2. Combine all franks and vegetables in a 6-8 qt pot and mix well. Spread into baking pan(s). (I use 2 9x9 baking pans.) Cover ingredients with a layer of sliced cheese.
  3. If cooking immediately, bake uncovered at 350 degrees F. for 15 min or possibly till cheese melts. If coming from refrigerator, cook covered at 350 degrees F. for 30-35 min, then uncovered for 10-15 min till cheese melts and ingredients are proportionately warmed.
  4. NOTES:* Casserole with frankfurters, vegetables and cheese.
  5. As a variation, cube half of the cheese and fold in with the vegetables, then top with remaining sliced cheese.
  6. Difficulty: Easy.
  7. Time: 45 min cooking, 15 min preparation, 15 min baking.
  8. Precision: Approximate measurement OK.
