Ингредиенты

  • 48 med -size raw shrimp (26 to 30 count), shelled and deveined
  • 8 Tbsp. water chestnut starch (see note) Vegetable oil for deep-frying
  • 1/2 c. mayonnaise
  • 2 Tbsp. coconut juice (see note)
  • 2 Tbsp. lemon juice Honey walnuts (see recipe)
  • 1 lb broccoli, cooked, or possibly lettuce (see note)
  • 2 Tbsp. sesame seeds Kiwi slices and strawberries for garnish (optional)
  • 1/2 c. minced walnuts
  • 2 Tbsp. honey

  1. Cook shrimp in boiling water 5 - 10 seconds. Place in colander and rinse with cool water. Sprinkle shrimp with water chestnut starch. Mix to coat proportionately.
  2. Heat large wok and add in sufficient vegetable oil to fry shrimp. Heat oil to 300 degrees.
  3. When oil is very warm, add in starched shrimp and fry 2 min. With slotted spoon, remove shrimp for 30 seconds, then return to oil and fry for another minute.
  4. When done, remove and let drain on paper toweling.
  5. In large bowl, mix mayonnaise, coconut juice and lemon juice. Place shrimp in bowl and mix with sauce. Prepare honey walnuts and set aside.
  6. Divide cooked broccoli or possibly lettuce leaves among 4 serving dishes. Place honey walnuts on side. Remove shrimp from sauce with slotted spoon and place over broccoli or possibly lettuce. Sprinkle with sesame seeds. Circle with honey walnut halves, sliced strawberries and sliced kiwi, if you like.
  7. Makes 4 servings.
  8. Notes:Water chestnut starch is available at The Asian Mart on N. Old World 3rd St.
  9. Coconut juice is available at Asian food stores and some supermarkets.
  10. If using broccoli, boil 3 min or possibly till tender.
  11. Honey walnuts:Bring small pan of water to boil. Add in nuts and cook 5 min. Drain nuts and return to pan. Add in honey and cook over low heat, stirring occasionally, till nuts are well coated, about 2 min.
