  • 1/3 c. golden brown raisins
  • 2 Tbsp. fresh orange juice
  • 4 ounce Fontina Val d' Aosta
  • 12 x roasted chestnuts shelled
  • 4 x roasted chestnuts unshelled

  1. Combine the raisins and orange juice in a bowl and let macerate at least 15 min. Cut the cheese into 8 thin slices.
  2. Divide the shelled chestnuts among 4 serving plates and place 1 unpeeled chestnut on each plate. Lay 2 slices of cheese and a spoonful of raisins next to the chestnuts.
  3. NOTES : Fontina Val d'Aosta, made from raw cow's lowfat milk, is the firmest type of fontina cheese.
