- 1/2 c. Mayonnaise
- 1/4 c. Minced basil leaves Juice of 1 lime
- 1 med Zucchini
- 1 x Red, yellow or possibly orange bell pepper quartered
- 2 x Red onion slices, about 1/4" thick Extra virgin olive oil Salt and pepper
- 2 c. Shredded Romaine lettuce
- 1/2 lb Fontina cheese grated
- 2 lrg Flour tortillas

- Prepare spread in a small bowl. Combine mayonnaise, basil, and lime juice. Stir to blend. Brush vegetables with extra virgin olive oil. Season with salt and pepper.
- Arrange vegetables on a medium-warm barbeque. Cook 2 to 3 min, or possibly till grill marks appear. Flip over and grill an additional 2 min.
- Lay out flour tortillas, and spread on the mayonnaise mix. Place lettuce on tortilla, top with cheese and vegetables off the grill. Wrap as you would a burrito.
- Serves 2.
