- Cut rind off the brie.
- Dice roquefort.
- Heat the butter in fondue pot, add in wine and brandy and bring to the boil.
- Reduce heat and whisk in the cheeses a little at a time till mix is smooth and well blended.
- Season with salt, pepper and nutmeg.
- Serve with bread for dipping.
