%20to%20a%20couple%20of%20his%20friends%20how%20great%20the%20first%20batch%20was.%3C/p%3E%3Cp%3EEven%20though%20my%20husband%20won%E2%80%99t%20eat%20some%20of%20the%20things%20I%20make%20he%20loves%20to%20brag%20to%20his%20friends.%20Because%20their%20wives%20are%20not%20cooking%20and%20baking%20the%20way%20I%20do.%20Their%20wives%20have%20probably%20never%20whipped%20up%20a%20couple%20of%20loaves%20of%20bread,%20made%20jams%20or%20jellies,%20baked%20a%20cake%20from%20scratch%20or%20actually%20cooked%20a%20meal%20that%20didn%E2%80%99t%20come%20out%20of%20a%20box%20or%20the%20freezer%20section%20of%20the%20grocery%20store%20for%20that%20matter.%3C/p%3E%3Cp%3EThe%20grocery%20stores%20are%20all%20out%20of%20carambola%20now%20or%20at%20least%20the%20one%20I%20checked%20was,%20after%20I%20realized%20I%20wasn%E2%80%99t%20sure%20I%20had%20enough%20on%20hand%20for%20this%20batch%20of%20jelly.%20Luckily%20I%20had%20just%20enough%20fruit%20to%20make%20this%20batch.%3C/p%3E%3Cp%3EMy%20son%20happens%20to%20have%20a%20very%20productive%20carambola%20tree%20in%20the%20yard%20of%20the%20house%20he%20rents.%20All%20winter%20long%20we%20picked%20from%20that%20tree%20and%20the%20kids%20ate%20fresh%20carambola.%20I%E2%80%99m%20sad%20to%20say%20my%20son%20will%20be%20moving%20next%20month%20so%20we%20won%E2%80%99t%20be%20able%20to%20enjoy%20the%20fresh%20picked%20carambola%20next%20winter.%20But%20my%20husband%20had%20picked%20the%20last%20fruit%20that%20was%20left%20on%20the%20tree%20the%20other%20day%20and%20I%20knew%20I%20had%20to%20make%20a%20batch%20of%20this%20jam%20before%20the%20fruit%20spoiled.%20So%20here%20we%20are.%3C/p%3E%3Cp%3EBefore%20beginning%20any%20jam%20or%20jelly%20making%20session%20you%20should%20already%20have%20your%20jars,%20lids%20and%20canning%20tools%20sterilized%20and%20at%20the%20ready.%3C/p%3E%3Cp%3EHow%20to%20prepare%20jars%20for%20canning%20or%20making%20jelly%3C/p%3E%3Cp%3ESterilize%20your%20jars%20by%20placing%20them%20into%20a%20pot%20of%20boiling%20water%20until%20completely%20submerged.%20Remove%20them%20from%20the%20boiling%20water%20and%20place%20them%20upside%20down%20on%20top%20of%20a%20dish%20towel.%20%20Also%20dip%20your%20funnel%20and%20ladle%20into%20the%20boiling%20water%20and%20place%20at%20the%20ready%20on%20your%20dish%20towel.%3C/p%3E%3Cp%3EPlace%20the%20flat%20lids%20into%20a%20small%20pot%20and%20bring%20to%20a%20boil.%20Turn%20heat%20off%20and%20leave%20lids%20in%20hot%20water.%3C/p%3E%3Cp%3ECanning%20Tip%3C/p%3E%3Cp%3EAlways%20prepare%20a%20few%20extra%20jars%20and%20lids%20then%20your%20recipe%20calls%20for.%20You%20don%E2%80%99t%20want%20to%20be%20caught%20with%20enough%20jam%20to%20fill%20an%20extra%20jar%20or%20so%20and%20not%20have%20a%20sterilized%20jar%20ready.%3C/p%3E%3Cp%3EThis%20recipe%20makes%206%201/2%20pints%20or%20Carambola%20&%20Strawberry%20Jelly.%3C/p%3E%3Cp%3EScroll%20down%20for%20the%20recipe%20in%20Ziplist%20format.%3C/p%3E%3Cp%3EFlorida%20Fresh:%20Carambola%20and%20Strawberry%20Jam%3C/p%3E%3Cp%3EInstructions%3C/p%3E%3Cp%3EWash%20and%20remove%20any%20blemishes%20from%20the%20carambola%20fruit.%3C/p%3E%3Cp%3ESlice%20them%20and%20the%20remove%20all%20seeds%20before%20putting%20the%20fruit%20in%20the%20pot.%3C/p%3E%3Cp%3EWash%20hull%20and%20slice%20strawberries.%3C/p%3E%3Cp%3EAdd%20the%20sugar%20into%20the%20large%20pot%20with%20the%20fruit%20and%20place%20on%20the%20stove%20on%20a%20medium%20heat.%3C/p%3E%3Cp%3EStir%20the%20fruit%20and%20sugar%20with%20a%20wooden%20spoon%20to%20get%20the%20fruit%20juices%20flowing.%3C/p%3E%3Cp%3EAdd%20the%20lemon%20juice%20and%20butter%20or%20margarine%20to%20the%20pot.%3C/p%3E%3Cp%3EThe%20butter%20or%20margarine%20will%20help%20cut%20down%20on%20foam.%3C/p%3E%3Cp%3EStir%20the%20sugar%20and%20fruit%20occasionally.%3C/p%3E%3Cp%3EAllow%20the%20sugar%20to%20melt%20completely%20on%20the%20medium%20heat.%3C/p%3E%3Cp%3EYou%20don%E2%80%99t%20want%20the%20sugar%20crystals%20to%20burn%20from%20too%20high%20a%20heat%20at%20this%20point.%3C/p%3E%3Cp%3EOnce%20the%20sugar%20has%20melted%20turn%20the%20heat%20up%20to%20medium%20high,%20carefully%20stirring%20occasionally%20and%20bring%20to%20a%20rolling%20boil.%3C/p%3E%3Cp%3EAdd%20the%20liquid%20pectin%20and%20bring%20to%20a%20rolling%20boil%20once%20again.%3C/p%3E%3Cp%3ECook%20fruit%20mixture%20for%20one%20full%20minute%20using%20a%20timer.%3C/p%3E%3Cp%3EOnce%20the%20minute%20is%20up%20remove%20from%20the%20heat%20to%20your%20countertop.%3C/p%3E%3Cp%3EWait%20until%20the%20mixture%20settles%20down%20and%20skim%20the%20foam%20from%20the%20top%20with%20a%20large%20spoon.%3C/p%3E%3Cp%3EUsing%20a%20ladle%20and%20a%20wide%20mouth%20funnel%20fill%20your%20jars%20leaving%201/4%20of%20head%20space.%3C/p%3E%3Cp%3EWipe%20the%20rims%20of%20the%20jars%20with%20a%20damp%20paper%20towel%20and%20put%20the%20flat%20lid%20on.%3C/p%3E%3Cp%3EScrew%20your%20lid%20bands%20on.%3C/p%3E%3Cp%3EContinue%20filling%20all%20your%20jars%20and%20process%20in%20a%20boil%20water%20bath%20for%2010%20minutes.%3C/p%3E%
