This cake is so beautiful. I made it for the first time this morning. Bella, the very hungry dog, assisted me. Sliced apples, pecans and raisins are the star ingredients. - To prepare Streusel:
- Place all ingredients in a bowl. Blend with a pastry cutter or fingers, until crumbly. Set aside.
- To prepare Cake:
- Stir together Sweet Potato mix and sugar.
- Melt butter.
- Add all ingredients to dry mix.
- Mix thoroughly. Pour into prepared 9 inch cake pan and bake.
- To prepare Icing:
- Combine all ingredients, except pecans and mix briskly.
- The Finish
- Test cake for doneness. Remove from oven, allow to cool 10 minutes. Before plating, run a knife around the cake, then plate and allow to cool.
- Drizzle with frosting and sprinkle with chopped pecans.
- If you are not serving the cake in a few hours, allow icing to firm, then wrap in plastic wrap. ENJOY.
