Time to shed those extra holiday pounds! With the diet season upon us, just about everyone I know is either going on a diet or is already on a diet, myself included. Talking about flavored butter really doesn't seem appropriate, does it? Well, one thing I don't like about dieting is; "diet" food seems to lack flavor. It is flavorless. The words bland and flat come to mind. An easy way to add flavor to foods with out adding calories, is to use fresh or dried herbs and to use spices. But sometimes, I think a pat or two of flavored butter is all that is needed. One pat of butter (1" square, 1/3" high) is only 36 calories. Not bad! One pat of butter can take a boring, steamed veggie to new flavor levels. One or two pats of flavored butter can add tons of flavor to a piece of steamed fish or grilled meats. A pat of flavored butter can add alot of flavor to cooked rice or pasta and a pat of flavored butter is a great substitute for mayo on any sandwich. The possibilities are endless. I am willing to add 36 to 72 calories to my meals, if it means I will enjoy eating them, that much more. For me, adding a little pat of flavor, will get me to eat my veggies:) You can form the flavored butters into a log shape, then wrap in plastic wrap. Store the wrapped butter in a small plastic baggie in your refrigerator and use as you would regular butter. * I like to use un-salted butter*
- Herb Butter:
- 1/2 cup butter, softened
- 1 clove garlic, minced
- 2 T minced fresh parsley or
- 2 t dried parsley flakes
- 1 t dried basil
- 1/1 t onion powder
- In a small mixing bowl, combine herb butter ingredients, mix until smooth.
- Great on steamed vegetables, corn on the cob, baked potatoes, rice, grilled meats and fish.
- Lemon or Orange Butter:
- 1/2 cup butter, softened
- 1 1/2 t. grated lemon or orange peel
- 3 T confectioners' sugar, optional
- Beat together butter, lemon or orange peel and sugar if using, until smooth.
- Great on steamed or grilled fish, meat or vegetables and rice.
- Honey Butter:
- 1/2 cup butter, softened
- 1/4 cup honey
- Beat together until smooth.
- Great on muffins, bread or pancakes.
- Maple Butter:
- 3/4 cup butter, softened
- 1/2 cup pure maple syrup
- Beat together until smooth.
- Great on Pumpkin Eggnog Pancakes, waffles, french toast and meats.
- Cinnamon Butter:
- 1/2 cup butter, softened
- 1 t ground cinnamon
- 3 T confectioners' sugar, optional
Beat together butter, cinnamon and sugar if using, until smooth.
Great on muffins, bagels, and rolls.
Pesto Butter:
1/2 cup butter, softened
1/4 cup of your favorite pesto
Beat together butter and pesto until smooth.
Great on cooked pasta, rice, grilled fish and chicken.
