%20Michael%20Symon.%20%20Normally,%20I%20don't%20keep%20the%20TV%20on%20during%20the%20day,%20but%20every%20now%20and%20then,%20I%20have%20it%20playing%20in%20the%20background.%20%20It%20just%20so%20happened%20the%20other%20day%20was%20one%20of%20those%20days.%3C/p%3E%3Cp%3EThe%20Chew%20was%20on.%3C/p%3E%3Cp%3EI%20saw%20Michael%20Symon%20make%20this%20amazing%20dish%20and%20instantly%20knew%20I%20wanted%20to%20give%20it%20a%20try.%20%20Perfectly%20cooked%20steak,%20an%20over%20easy%20egg,%20and%20an%20arugula%20salad%20dressed%20with%20a%20bacon%20vinaigrette.%20Vinegary%20dressing%20mixed%20with%20a%20rich,%20soft,%20runny%20egg%20yolk%20is%20something%20you%20MUST%20try%20at%20least%20once%20in%20your%20life!%3C/p%3E%3Cp%3EMy%20mouth%20was%20watering!%3C/p%3E%3Cp%3EChef%20Symon%20used%20minute%20steaks,%20but%20I%20have%20grown%20very%20fond%20of%20the%20flat%20iron%20cut%20of%20meat%20and%20that%20is%20what%20I%20used%20in%20my%20version.%20%20They%20are%20relatively%20inexpensive,%20always%20tender%20and%20cook%20up%20quick.%20(you%20can%20read%20all%20about%20them%20HERE).%20%20I%20let%20the%20steak%20rest%20for%20about%2010%20minutes%20after%20grilling%20it%20and%20then%20sliced%20it%20across%20the%20grain.%20%20A%20serving%20is%20about%203%20oz.%20of%20meat.%3C/p%3E%3Cp%3ETo%20help%20keep%20the%20fat%20and%20calories%20in%20check%20with%20this%20dish,%20I%20did%20not%20use%20the%20bacon%20grease%20from%20cooking%20the%20bacon%20in%20my%20dressing%20like%20Chef%20Symon%20did.%20%20Instead,%20I%20opted%20for%20more%20heart%20healthy%20extra%20virgin%20olive%20oil%20for%20the%20fat%20portion%20of%20the%20dressing.%20I%20only%20used%202%20strips%20of%20bacon%20(left%20over%20from%20the%20weekend)%20which%20I%20zapped%20in%20the%20microwave%20for%20a%20couple%20of%20seconds%20to%20re-crisp.%20%20A%20vinaigrette%20traditionally%20calls%20for%20a%20ratio%20of%202%20parts%20fat%20to%201%20part%20acid,%20but%20I%20like%20to%20reverse%20it%20and%20use%20more%20acid%20and%20less%20fat.%3C/p%3E%3Cp%3EWow...is%20about%20all%20I%20have%20to%20say,%20because%20this%20was%20an%20AH-mazing%20weeknight%20meal%20that%20took%20minutes%20to%20prepare!%3C/p%3E%3Cp%3EFlat%20Iron%20Steak%20with%20Egg%20and%20Arugula%20Salad%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3E1.%20%20Heat%20up%20grill%20pan%20or%20heavy%20skillet.%20%20Spray%20with%20cooking%20spray.%20%20Season%20flat%20iron%20with%20salt%20and%20pepper.%20%20Cook%20flat%20iron%20steak%20to%20desired%20doneness.%20%20(I%20like%20med-rare)%20%20Remove%20steak%20and%20allow%20to%20rest%20for%20about%2010%20minutes,%20loosely%20covered%20in%20foil.%3C/p%3E%3Cp%3E2.%20%20In%20small%20bowl,%20or%20small%20canning%20jar,%20combine%20the%20olive%20oil,%20vinegar%20and%20Dijon%20mustard.%20%20Whisk%20or%20shake%20to%20mix.%20%20Add%20in%20the%20bacon.%20%20Heat%20in%20microwave%20for%20a%20few%20seconds%20(I%20put%20it%20in%20for%2020%20seconds),%20just%20to%20warm%20it%20up%20and%20allow%20the%20bacon%20to%20start%20to%20flavor%20the%20dressing.%20%20Set%20aside.%3C/p%3E%3Cp%3E3.%20%20In%20skillet%20you%20cooked%20steak%20in%20(or%20another%20skillet%20if%20you%20used%20a%20grill%20pan)%20spray%20with%20cooking%20spray%20and%20heat%20to%20med-high.%20%20Cook%20eggs%20to%20desired%20doneness.%20%20(I%20go%20over-easy)%3C/p%3E%3Cp%3E4.%20Mix%20arugula%20with%20the%20dressing.%20%20Season%20with%20salt%20and%20pepper.%3C/p%3E%3Cp%3E5.%20%20Slice%20up%20the%20steak,%20across%20the%20grain,%20into%20thin%20slices.%20%20Put%20about%203%20oz.%20on%20each%20plate.%20%20Put%20about%201%201/2%20cups%20dressed%20arugula%20on%20each%20plate.%20%20Top%20it%20all%20with%20an%20egg.%20%20Serve%20immediately.%3C/p%3E%3Cp%3EI%20will%20most%20definitely%20be%20making%20this%20recipe%20again.%20%20I%20absolutely%20loved%20the%20flavors%20together.%20%20This%20is%20a%20very%20low%20carb%20meal,%20so%20adding%20a%20piece%20of%20crusty%20bread%20to%20go%20along%20side%20it%20would%20be%20a%20wonderful%20accompaniment.%3C/p%3E%3Cp%3EAre%20you%20a%20fan%20of%20greens%20and%20eggs?%20%20I%20love%20them%20together!%3C/p%3E){kind=link}
