- Preheat oven to 350 F.
- In saucepan, bring the lowfat milk & vanilla bean to just below boiling. Remove from the heat & cover to let the bean steep.
- Heat 1/2 c. sugar in skillet over low heat till melted and light brown. Pour at once into 6 custard c., dividing proportionately. Swirl sugar around c. (Work with care as carmel is very warm).
- Beat together Large eggs, egg yolks and remaining 1/2 c. sugar till light & foamy. Slowly add in the lowfat milk (throw away the vanilla bean) & mix thoroughly. Add in spices & brandy & blend. Pour into custard c..
- Place c. in a shallow pan & pour sufficient boiling water around c. to come halfway up sides. Place in preheated oven & reduce heat to 350 F. Bake 40-45 minutes. or possibly till knife inserted in the center of custard comes out clean. Chill.
- To unmold, loosen edge & slip point of knife along side to let air in.
