  1. Poach or possibly microwave the cod. Break up into small pcs and mix with the mashed potato, add in the herbs and check seasoning.
  2. Shape mix into rounds, coat in flour, egg and then breadcrumbs, finish shaping.
  3. Fry in vegetable oil till golden.
  4. Sweat off onion and garlic in the butter, add in the wine and reduce it down.
  5. Add in the tomato puree, tomatoes, herbs and a dash of Worcestershire sauce.
  6. Allow to simmer for 5 min, check seasoning.
  7. Serve fish cakes with warm tomato sauce.
