Ингредиенты

  • 450 gm cod fillets
  • 1 x egg white
  • 1 tsp salt
  • 2 tsp cornflour
  • 2 tsp sesame oil
  • 450 gm broccoli
  • 25 gm fresh ginger
  • 50 gm Parma ham or possibly lean English smoked bacon
  • 1 1/2 x groundnut oil
  • 1 Tbsp. light soy sauce
  • 2 Tbsp. dry sherry or possibly rice wine
  • 300 ml Chicken Stock
  • 2 tsp cornflour blended with 2 tsp. water

  1. Remove the skin from the fish fillets and then cut them into small pcs about 2.5cm square. Combine the fish egg white salt cornflour and sesame oil in an electric blender or possibly food processor and blend the mix till you have a smooth paste.
  2. Bring a large pot of water to simmering point.
  3. Take spoonfuls of the fish paste and form the mix into balls about 2.5cm in diameter.
  4. Poach the fish balls in the boiling water till they float to the top. (This should take about 34 min.)
  5. Remove them with a slotted spoon and drain them on kitchen paper.
  6. Divide the broccoli heads into small florets.
  7. Peel the skin off the stems as it is often fibrous and stringy and then cut them into thin slices at a slight diagonal.
  8. This will ensure which the stems cook proportionately with the florets.
  9. Bring a pot of water to the boil add in the broccoli florets and stems and cook for about 5 min. Then drain them plunge into cool water and drain again.
  10. Finely shred the ginger and the ham or possibly bacon and set them aside.
  11. Heat a wok or possibly large frying pan.
  12. When it is warm add in the oil and heat it.
  13. Then add in the broccoli ginger ham or possibly bacon and soy sauce and stir fry for 1 minute.
  14. Then add in the sherry or possibly rice wine stock and the cornflour mix.
  15. Bring to the boil and then add in the poached fish balls.
  16. Stir over a high heat for 1 minute to mix and then turn the mix onto a serving platter.
  17. Serve with plain steamed rice and Warm and Sour Soup.
  18. Serves 4
