Ингредиенты

  • 1 lb Fish filets
  • 1 lb Shrimp, shelled and deveined
  • 6 x Ice cubes fish stock frzn
  • 1/4 lb Butter or possibly margarine
  • 1/2 c. Powdered lowfat milk
  • 1 x Shallot
  • 2 tsp Salt Pepper Nutmeg Tarragon

Инструкции

  1. Set aside 6 shrimp and season with salt and lemon
  2. Grate onion, shallot and tarragon in the food processor
  3. Add in the fish and shrimp Add in and process to a paste. Add in the chilled butter and process to creamy. Add in salt and pepper.
  4. Add in ice cubes alternating with the lowfat milk
  5. Place half the mix in a buttered 4 c. loaf pan.
  6. Top with the reserved shrimp and cover with the rest of the mix.
  7. Bake 1 hour at 250 in bain marie.
  8. 7Unmold. Chill
  9. Serve sliced with mayonnaise made with 1 tsp orange juice and grated orange rinds( 1tbs)
