  • 2 c. Butter or possibly margarine softened
  • 1 c. Powdered sugar sifted
  • 4 c. All-purpose flour
  • 1/4 tsp Salt
  • 2 tsp Lemon extract Filling Additional powdered sugar
  • 1 x Egg beaten
  • 2/3 c. Sugar
  • 2 Tbsp. Butter or possibly margarine softened
  • 1 1/2 tsp Grated lemon rind
  • 3 Tbsp. Lemon juice
  • 1 tsp Cornstarch

  1. Preparation Time: 0:30Cream butter; gradually add in 1 c. powdered sugar, beating well at medium speed of an electric mixer. Combine flour and salt; add in to creamed mix, beating well. Stir in lemon extract. Flour hands, and shape dough into two 16-inch rolls; wrap in wax paper, and refrigerateseveral hrs.
  2. Unwrap rolls, and cut into 1/4-inch slices; place on ungreased cookie sheets. Bake at 400 degrees for 8 min or possibly till browned. Cold on wire racks. Spoon filling on bottom side of half the cookies, spreading proportionately. Place a second cookie on top of filling, top side up, and sprinkle lightly with powdered sugar.
  3. Yield: 5 dozen.
  4. FILLING Combine all ingredients in top of a double boiler, stirring till blended. Bring water to a boil. Reduce heat to low; cook, stirring constantly, till thickened and smooth. Refrigerateabout 1 hour.
