I had just posted on Facebook begging for fresh figs when a friend showed up with pounds of them and not in response to my virtual begging. It was fate.
I had just been perusing a cookbook that had a simple dessert recipe that called for figs. And that got me thinking: you can’t just buy figs at the grocery store (around here). It seems like you have to know someone.

This theory was proved when my dad stopped by and his mouth gaped open at the sight of my three pounds of figs, which I did not share (bad daughter!).
After I ate quite a few figs by the handful, I knew I loved the fruit.
After I made this galette, I knew how lucky I was to know someone with figs.

- Ingredients
- 1 9″ pie crust (here’s my favorite)
- 2-3 Tablespoons of brown sugar
- 3 cups of fresh figs, quartered
Instructions
Preheat oven to 375*.
Roll your pie crust into a circle.
Arrange figs in a concentric fashion, leaving about 2″ of space around the perimeter of the pie.
Sprinkle with brown sugar.
Fold edges of pie crust over filling.
Bake at 375* for 40 minutes or until pastry is browned and filling is bubbly.
