- Heat the oil in a large pot over medium heat. Add in the onion, bell pepper and garlic and cook till translucent/soft. Add in the field peas, stirring to combine. Add in 2 1/2 c. water, the salt and the pepper and bring to a boil.
- Add in the rice and the sprig of thyme; stir once. Bring back to a boil, cover and reduce heat. Simmer for 20 min, then remove from the heat and let stand, covered, for an additional 10 min.
- Uncover, taste and adjust seasonings with salt and pepper. Fluff with a fork and serve.
- Makes 6 to 8 servings.
