Fideus With Clams And Garlic Mayonnaise

Ингредиенты

  • 2/3 c. Mayonnaise
  • 2 x Garlic cloves chopped
  • 1 Tbsp. Buttermilk
  • 1 bn Fresh chives chopped Salt to taste Freshly-grnd black pepper to taste
  • 3 Tbsp. Extra virgin olive oil
  • 1 x Onion minced
  • 1 x Leek, white and pale green parts minced
  • 2/3 c. Dry white wine
  • 1 1/2 lb Fish bones from white fish
  • 8 c. Water
  • 6 sprg Fresh parsley
  • 1 tsp Whole black peppercorns
  • 1 x Bay leaf
  • 12 ounce Fideous pasta or possibly vermicelli
  • 20 lrg Clams in shells scrubbed

  1. Whisk mayonnaise, garlic and buttermilk in small bowl till smooth. Stir in chives. Season to taste with salt and pepper. Cover and chill 1 hour to allow flavors to blend.
  2. Heat 1 Tbsp. oil in heavy large Dutch oven over medium heat. Add in onion and leek and saute/fry till tender but not brown, about 10 min. Add in wine and boil till almost all liquid evaporates, about 2 min. Add in fish bones, water, parsley, peppercorns and bay leaf. Simmer till liquid is reduce to 6 c., about 1 hour. Strain; throw away solids.
  3. Heat remaining 2 Tbsp. oil in heavy large Dutch oven over medium-high heat. Break pasta into 2-inch lengths and add in to Dutch oven. saute/fry till pasta is golden, about 5 min. Add in stock. Cook till pasta is almost tender, but mix is still soupy, about 3 min. Add in clams, pushing into broth. Cover and cook till clams open, about 8 min. Throw away any clams which don't open. Season to taste with salt and pepper.
  4. Ladle into bowls. Spoon dollop of garlic mayonnaise over and serve.
  5. This recipe yields 4 servings.
