This colorful and festive kale salad is perfect for the holidays or any time of the year. It is made with chopped kale, dried cranberries, brussels sprouts, red onions, walnuts and topped with a citrus vinaigrette dressing.

The sweetness of the dried cranberries and dressing balance out the boldness of the kale, brussels sprouts and tangy onion. Since kale is not wimpy like most lettuces are, you can add half of the dressing at least a half hour before serving. This will soften the kale and combine the flavors.

Drizzle the remaining dressing on the salad just before serving. Don’t forget to make extra, this salad tastes great the next day!

Festive Kale Salad Add the dressing at least 30 minutes before serving to soften the kale and combine the flavors Ingredients

SALAD 1 large bunch of organic kale coarsely chopped with stems removed 1 medium red onion diced 2 cups brussels sprouts sliced thin (about 13 brussels sprouts) ¾ cup walnut pieces coarsely chopped 1 cup organic dried cranberries DRESSING ¼ cup olive oil ⅛ cup apple cider vinegar ⅛ cup FRESH squeezed orange juice 1 tablespoon Dijon mustard 1 teaspoon honey 1 clove crushed garlic Instructions

Place salad ingredients into a large bowl Mix the dressing ingredients together and set aside TO MAKE THE DRESSING: Add the ingredients to a small bowl and whisk until combined OR Add all ingredients to a small mason jar and shake well TO PUT IT ALL TOGETHER: Pour approximately half of the dressing over salad and mix in well Refrigerate for at least 30 minutes Serve salad with remainder dressing 3.5.3208
