Fennel Orange & Olive Salad – Clean & Delicious ®

The more I study nutrition the more I can tell you with 100% confidence that we really need to eat our veggies, people.

The higher the quality, the better. Local, organic, made with love…

But truth be told, I don’t care if you buy them pre-chopped in a bag from Trader Joe’s. If that’s what it’s going to take to make it happen, then so be it.

I know for me, veggies can be the hardest thing to get in sometimes, simply because they take a little work.

You have to buy them.

You have to prep them.

And you have to have them ready to go when you are.

That’s why I love this salad so much.

You can pull everything out of the fridge with no pre-prep work at all and still pull it together in 5 minutes (10 for those of you who haven’t learned to use your knife yet!).

Try making this salad as a light lunch for one or along side a warm bowl of soup or a hot sammie. It’s an easy and delicious way to make sure you’re getting your veggies in.

Fennel, Orange & Olive Salad

Yield: Serves 1-2

Ingredients:

1 small bulb of fennel, thinly sliced

1 clementine, each segment cut into thirds

Directions:

Combine fennel, clementine, and calamite olives in a small bowl. Toss with lemon, olive oil and salt. Enjoy!
