  • 2 c. All purpose flour
  • 1/3 c. Sugar
  • 1 Tbsp. Baking pwdr
  • 1 tsp Grnd cinnamon
  • 1/4 tsp Baking soda
  • 1/4 tsp Grnd allspice
  • 1/4 tsp Grnd nutmeg
  • 1 c. Apple cider or possibly juice
  • 1/3 c. Vegetable oil
  • 1/4 c. Pure maple syrup
  • 1 lrg Egg beaten to blend
  • 1 tsp Vanilla extract
  • 8 ounce Baking apple peel/grate
  • 1 c. Golden brown raisins
  • 3 1/2 ounce Walnuts chop coarse

  1. Position rack in center of oven and preheat to 400 degrees. Line twelve 1/3-c. muffin c. with paper liners.
  2. Combine flour, sugar, baking pwdr, grnd cinnamon, baking soda, grnd allspice and nutmeg in bowl.
  3. Whisk apple cider, vegetable oil, maple syrup, egg and vanilla extract in medium bowl to blend. Add in to dry ingredients and mix just till combined. Mix in grated apple, golden brown raisins and minced walnuts. Divide batter equally among prepared muffin c..
  4. Bake till muffins are brown and tester inserted into center of muffins comes out clean, about 28 min. Transfer muffin tin to rack and cold.
