- 12 ounce can cooked garbanzo beans (aka chickpeas), liquid removed
- 1/4 c. tahini
- 1/4 c. extra virgin olive oil
- 1 x juice of two lemons (about 1/4 c.) Eight cloves roasted garlic
- 4 x cloves chopped raw garlic
- 1/2 tsp grnd cumin

- Fifteen good shakes pepper sauce (like Tabasco)
- Kosher salt and fresh-grnd black pepper to taste 1/4 c. apple cider vinegar (optional for extra tartness)
- Combine first four ingredients in the bowl of a food processor and pulse into a smooth paste (add in more extra virgin olive oil to thin out, if necessary). When smooth consistency is achieved - think really thick pancake batter - scrape down the sides of the bowl, then add in garlic, cumin and salt and pulse till integrated. Drizzle on extra-virgin extra virgin olive oil and serve with pita bread wedges (for dipping) and good olives (for snacking).
- Serves 4-6as an appetizer.
