Did you know that there are dozens of delicious recipes on the Flora website? (the broccoli and cauliflower pancakes sound especially gorgeous!) Today they’re kindly letting me share a recipe from their website – leek and potato soup!
Leek and potato soup is an utter classic, and there’s a reason for that. It’s thick and creamy (this version in particular!!), with beautiful flavours from the oniony leeks – and it’s healthy too! I love the addition of carrots in this recipe – they add an extra hit of vitamin C (very much needed in this cold weather!), and give the soup a lovely colour, without making the flavour hugely different from the classic version.

%20Today%20they%E2%80%99re%20kindly%20letting%20me%20share%20a%20recipe%20from%20their%20website%20%E2%80%93%20leek%20and%20potato%20soup!%3C/p%3E%3Cp%3ELeek%20and%20potato%20soup%20is%20an%20utter%20classic,%20and%20there%E2%80%99s%20a%20reason%20for%20that.%20It%E2%80%99s%20thick%20and%20creamy%20(this%20version%20in%20particular!!),%20with%20beautiful%20flavours%20from%20the%20oniony%20leeks%20%E2%80%93%20and%20it%E2%80%99s%20healthy%20too!%20I%20love%20the%20addition%20of%20carrots%20in%20this%20recipe%20%E2%80%93%20they%20add%20an%20extra%20hit%20of%20vitamin%20C%20(very%20much%20needed%20in%20this%20cold%20weather!),%20and%20give%20the%20soup%20a%20lovely%20colour,%20without%20making%20the%20flavour%20hugely%20different%20from%20the%20classic%20version.%3C/p%3E%3Cp%3EI%20did%20make%20a%20few%20small%20changes%20to%20the%20recipe%20on%20the%20Flora%20website.%20Firstly,%20I%20made%20a%20slightly%20smaller%20batch,%20since%20there%20are%20only%20two%20of%20us%20and%20I%20didn%E2%80%99t%20want%20to%20be%20eating%20soup%20for%20days%20on%20end%20(delicious%20though%20it%20was).%20I%20also%20added%20a%20few%20cloves%20of%20garlic,%20since%20I%20think%20there%20isn%E2%80%99t%20a%20single%20recipe%20in%20this%20world%20that%20isn%E2%80%99t%20improved%20by%20garlic.%3C/p%3E%3Cp%3E(note:%20the%20above%20is%20definitely%20not%20true.%20I%20take%20no%20responsibility%20for%20people%20who%20add%20garlic%20to%20their%20cake%20mix)%3C/p%3E%3Cp%3EThe%20unbelievable%20creaminess%20of%20this%20soup%20is%20due%20to%20a%20technique%20that%20I%E2%80%99d%20not%20used%20before,%20involving%20a%20mixture%20of%20cornflour%20and%20milk.%20I%20usually%20use%20cream%20in%20my%20creamy%20soups%20(which%20is%20why%20I%20don%E2%80%99t%20make%20them%20very%20often!!)%20%E2%80%93%20I%20always%20assumed%20that%20milk%20would%20be%20a%20bit%20too%20thin,%20but%20with%20the%20addition%20of%20the%20cornflour,%20it%20works%20really%20well%20to%20make%20the%20soup%20super%20creamy%20(and%20it%E2%80%99s%20much%20healthier%20than%20actual%20cream%20too!).%20To%20be%20honest,%20the%20soup%20was%20quite%20creamy%20even%20without%20the%20milk+cornflour%20addition,%20but%20this%20took%20it%20over%20the%20edge%20to%20the%20omg-so-creamy%20kind%20of%20creamy.%20It%E2%80%99s%20definitely%20a%20technique%20I%E2%80%99ll%20be%20experimenting%20with%20again!%3C/p%3E%3Cp%3EI%20don%E2%80%99t%20tend%20to%20use%20margarine%20very%20often%20in%20my%20cooking%20%E2%80%93%20I%20like%20a%20rich,%20creamy%20flavour,%20so%20I%20usually%20just%20stick%20to%20butter.%20However,%20the%20flavour%20of%20Flora%20Buttery%20is%20just%20the%20same%20as%20real%20butter%20(if%20I%20was%20a%20bit%20more%20shameless,%20I%E2%80%99d%20eat%20it%20with%20a%20spoon%E2%80%A6%20maybe),%20and%20I%20really%20like%20how%20it%E2%80%99s%20soft%20and%20spreadable,%20even%20when%20you%20keep%20it%20in%20the%20fridge.%20The%20worst%20thing%20about%20real%20butter,%20in%20my%20opinion,%20is%20the%20way%20it%20goes%20rock%20solid%20in%20the%20fridge%20and%20ruins%20your%20bread%20when%20you%20try%20to%20spread%20it.%20This%20problem%20doesn%E2%80%99t%20exist%20with%20Flora%20Buttery!%20It%E2%80%99s%20definitely%20going%20to%20be%20making%20regular%20appearances%20on%20my%20shopping%20list%20from%20now%20on.%3C/p%3E%3Cp%3EExtra%20creamy%20leek%20and%20potato%20soup%20%20%20%20%20%20%20%20Author:%20Becca%20@%20Amuse%20Your%20Bouche%20Recipe%20type:%20Soup%20Yield:%203%20%20%20Ingredients%3C/p%3E%3Cp%3E2%20tbsp%20Flora%20Buttery%202%20medium%20leeks,%20halved%20lengthwise%20then%20sliced%203%20cloves%20garlic,%20minced%202%20medium%20carrots,%20sliced%203%20medium%20potatoes,%20diced%20250ml%20(~1%20cup)%20vegetable%20stock%20%C2%BD%20tsp%20dried%20thyme%20Black%20pepper%202tbsp%20cornflour%20500ml%20(~2%20cups)%20milk%20Fresh%20parsley,%20for%20serving%20(optional)%20%20%20Instructions%3C/p%3E%3Cp%3EAdd%20the%20Flora%20Buttery%20to%20a%20large%20saucepan%20along%20with%20the%20leeks%20and%20garlic,%20and%20saut%C3%A9%20for%20a%20few%20minutes,%20until%20soft%20and%20fragrant.%20Add%20the%20chopped%20carrots%20and%20potatoes%20to%20the%20pan,%20as%20well%20as%20the%20vegetable%20stock,%20thyme%20and%20plenty%20of%20black%20pepper.%20Don%E2%80%99t%20worry%20if%20the%20vegetables%20aren%E2%80%99t%20entirely%20submerged.%20Cover%20the%20pan,%20and%20bring%20to%20a%20gentle%20simmer.%20Stirring%20occasionally,%20cook%20for%20around%2010%20minutes,%20or%20until%20the%20vegetables%20are%20tender.%20While%20the%20vegetables%20are%20simmering,%20dissolve%20the%20cornflour%20in%20the%20cold%20milk%20(I%20found%20this%20easiest%20using%20a%20whisk).%20When%20the%20vegetables%20are%20soft,%20carefully%20transfer%20the%20mixture%20to%20a%20blender,%20and%20blend%20until%20smooth%20(I%20used%20my%20trusty%20Optimum%209400!).%20Return%20the%20soup%20to%20the%20pan,%20and%20add%20the%20milk%20mixture.%20Stirring%20regularly,%20cook%20over%20a%20gentle%20heat%20for%20a%20few%20more%20minutes%20until%20the%20s
