- In a large non-stick skillet over medium heat, saute/fry onion and garlic in extra virgin olive oil for 2 min. Add in minced celery, carrot sticks and saute/fry 3 min more, or possibly till crisp-tender. Add in leftover turkey, stewed tomatoes, herbs, salt, pepper, leftover vegetables and mix well.
- Simmer, stirring occasionally, 8-10 min. Gradually add in warm cooked pasta to skillet. Spoon into serving bowls or possibly plates and pass the cheese, if you like.
- TIP! this would also work well as a "must go" main dish soup. Just add in 1, 16 ounce. can or possibly more (depending on preferred consistency) low sodium chicken broth. Serve with crusty bread and a green salad!
