- Beat sugar, large eggs and oil together. Add in flour, salt and soda. Add in fruit cocktail with juice and mix well by hand. Pour batter into 9 x 13 inch greased pan. Sprinkle coconut over top of batter. Bake 45 min at 350 degrees.
- Put butter, lowfat milk, sugar and vanilla in saucepan, bring to boil, stirring constantly. When thick, add in coconut and nuts. Spread on cake while both are hot.
