%20and%20I%20kept%20one%20third,%20figuring%20I%20would%20photograph%20them%20in%20a%20day%20or%20two.%20%20The%20thing%20is,%20as%20far%20as%20I%20could%20remember%20from%20last%20year,%20when%20I%20made%20them%20with%20almonds,%20these%20cookies%20were%20not%20as%20crazy%20of%20a%20hit%20with%20my%20husband%20or%20kids.%20%20Apparently%20that%20was%20either%20changing%20tastes%20or%20the%20almonds,%20one%20or%20the%20other,%20because%20when%20I%20went%20looking%20for%20some%20cookies%20to%20photograph,%20all%20I%20found%20were%20crumbs.%3C/p%3E%3Cp%3EOoops.%20%20So%20a%20few%20days%20before%20Christmas%20I%20made%202%20more%20batches,%20one%20plain%20hazelnut%20and%20one%20with%20espresso%20powder.%20%20My%20absolute%20favorite,%20hands%20down,%20was%20the%20espresso%20version.%20%20John%20still%20prefers%20them%20plain.%20%20My%20sister%20and%20my%20dad%20really%20liked%20the%20espresso%20(it%20cuts%20a%20lot%20of%20the%20sweetness%20from%20the%20caramelized%20sugar,%20lending%20a%20bittersweet%20complexity%20to%20the%20cookie).%3C/p%3E%3Cp%3EBut%20if%20you%20cannot%20decide%20which%20to%20make,%20just%20do%20what%20I%20did%20and%20make%20both.%20%20I%20have%20received%20enough%20compliments%20on%20both%20versions%20of%20this%20cookie%20that%20I%20think%20I%20can%20safely%20say%20both%20are%20guaranteed%20crowd-pleasers%20and%20worth%20the%20small%20effort.%20%20And%20they%20are%20also%20good%20keepers,%20like%20all%20of%20my%20favorite%20holiday%20cookie%20recipes.%20%20And%20despite%20my%20encouragement%20to%20bake%20these%20for%20the%20holidays,%20I%20would%20argue%20they%20also%20make%20excellent%20summer%20treats,%20as%20they%20are%20delicate%20and%20light%20(despite%20being%20rich)%20and%20go%20really%20well%20with%20ice%20cream.%20%20For%20an%20unusual-but%20incredibly%20tasty-Valentine%E2%80%99s%20dessert,%20try%20serving%20these%20cookies%20in%20a%20martini%20glass%20in%20white%20chocolate%20mousse.%3C/p%3E%3Cp%3EThe%20easiest%20way%20to%20deal%20with%20this%20recipe%20is%20to%20buy%20pre-ground%20nut%20meal,%20although%20you%20can%20certainly%20grind%20it%20yourself.%20%20Bob%E2%80%99s%20Red%20Mill%20sells%20both%20almond%20and%20hazelnut.%20%20As%20far%20as%20I%20know%20you%20can%20use%20any%20nut%20you%20want.%20%20This%20is%20a%20fun%20cookie%20to%20demonstrate%20to%20your%20kids%20because%20of%20the%20way%20the%20blobs%20of%20dough,%20shown%20above,%20spread%20into%20such%20delicate,%20lacy%20cookies.%20%20If%20you%20prefer%20the%20plain%20version,%20just%20leave%20out%20the%20espresso.%3C/p%3E%3Cp%3EEspresso%20Hazelnut%20Lace%20Cookies%3C/p%3E%3Cp%3ERecipe%20very%20closely%20adapted%20from%20Fine%20Cooking%3C/p%3E%3Cp%3EPosition%20two%20racks%20in%20the%20upper%20and%20lower%20thirds%20of%20the%20oven.%20Pre%20heat%20the%20oven%20to%20350%20%20F.%20Line%20two%20baking%20sheets%20with%20silicone%20liners%20or%20parchment%20paper.%3C/p%3E%3Cp%3EIf%20necessary,%20use%20a%20food%20processor%20to%20grind%20the%20hazelnuts%20finely%20and%20measure%20out%201/2%20cup%20if%20you%20don%E2%80%99t%20have%20a%20scale%20(I%20just%20weighed%20the%20hazelnut%20meal).%20Heat%20the%20butter,%20sugar,%20instant%20espresso%20and%20corn%20syrup%20in%20a%20medium%20saucepan%20over%20low%20heat,%20stirring%20often,%20until%20the%20butter%20melts%20and%20the%20sugar%20dissolves.%20Increase%20the%20heat%20to%20medium%20high%20and,%20stirring%20constantly,%20bring%20the%20mixture%20just%20to%20a%20boil.%20Remove%20the%20pot%20from%20the%20heat%20and%20stir%20in%20the%20flour%20and%20salt%20until%20incorporated.%20Stir%20in%20the%20hazelnut%20meal%20and%20the%20vanilla.%20%20The%20mixture%20will%20thicken%20yet%20will%20still%20be%20quite%20loose%20while%20it%20is%20hot.%20%20As%20it%20cools,%20it%20will%20become%20firmer%20and%20firmer%E2%80%93and%20stickier,%20until%20finally%20it%20is%20easier%20to%20use%20your%20fingers%20to%20pinch%20the%20dough.%20%20Both%20consistencies%20are%20totally%20fine.%3C/p%3E%3Cp%3EDrop%20the%20batter%20by%20the%20teaspoon%203%20inches%20apart%20on%20the%20baking%20sheets,%20six%20cookies%20per%20baking%20sheet.%20Bake%20the%20cookies%20until%20evenly%20light%20brown,%20about%2010%20minutes.%20Oddly,%20despite%20starting%20out%20quite%20different%20colors,%20the%20espresso%20and%20plain%20versions%20look%20remarkably%20the%20same%20after%20being%20baked.%20%20About%205%20minutes%20into%20baking,%20switch%20the%20sheets%20from%20top%20to%20bottom%20and%20back%20to%20front%20to%20promote%20even%20baking.%20The%20cookies%20won%E2%80%99t%20begin%20to%20spread%20until%20about%206%20minutes%20into%20baking.%3C/p%3E%3Cp%3ERemove%20the%20cookies%20from%20the%20oven%20and%20let%20them%20set%20on%20the%20pan%20for%203-5%20minutes.%20%20When%20they%20are%20firm%20enough%20to%20remove,%20use%20a%20wide%20spatula%20to%20transfer%20them%20to%20a%20cooling%20rack%20to%20cool%20completely.%20%20Wipe%20the%20pan%20with%20a%20paper%20towel%20before%20re-using.%3C/p%3E){kind=link}
