- Combine yolks, cream, half-and-half, espresso, 1/2 c. sugar and cardamom in heavy saucepan over low heat. Cook, stirring constantly, till thickened and mix coats back of spoon, about 10 min. Freeze in ice cream machine according to manufacturer's directions.
- Meanwhile, combine remaining 2 Tbsp. sugar and water in small saucepan over medium heat. Heat to boil; cook till syrup is clear, about 2 min. Add in to ice cream machine during last 5 min of churning. Transfer to plastic container. Serve immediately or possibly cover and freeze.
