%3C/p%3E%3Cp%3EI%20should%20first%20say%20a%20big%20thanks%20to%20Sandeepa%20of%20Bongmom%20Cookbook%20for%20all%20her%20amazing%20Bengali%20recipes.%20It%20was%20a%20breeze%20picking%20my%20dishes%20for%20letters%20A~H%20because%20of%20her%20blog.%20I%20already%20made%20Aam%20Doi,%20Charchari%20and%20Doi%20Dharosh%20from%20her%20blog.%20Today's%20dish%20Enchor%20Kofta%20or%20jacfruit%20kofta%20curry%20recipe%20is%20also%20from%20her%20blog.%3C/p%3E%3Cp%3EI've%20had%20a%20few%20mishaps%20making%20koftas%20in%20the%20past,%20so%20I'm%20usually%20wary%20about%20trying%20any%20new%20recipe.%20But%20Sandeepa's%20recipe%20looked%20doable,%20I%20took%20the%20plunge%20and%20made%20them%20following%20her%20recipe.%20The%20koftas%20were%20probably%20the%20best%20I've%20ever%20made.%3C/p%3E%3Cp%3EKoftas%20are%20made%20with%20jackfruit%20and%20potatoes.%20It%20is%20hard%20to%20tell%20that%20the%20koftas%20have%20jackfruit%20from%20the%20taste%20and%20texture,%20but%20they%20sure%20taste%20delicious.%20Canned%20jackfruit%20comes%20in%20very%20handy%20here,%20no%20peeling%20or%20cleaning%20required,%20just%20drain,%20rinse%20and%20you%20are%20good%20to%20go.%3C/p%3E%3Cp%3EGravy%20is%20quite%20simple%20with%20tomato%20base%20and%20thickened%20slightly%20with%20cashew%20or%20almond%20butter%20(or%20ground%20cashews/%20almonds)%20and%20a%20splash%20of%20heavy%20cream,%20if%20you%20feel%20a%20little%20indulgent.%20Koftas%20can%20be%20prepped%20and%20refrigerated%20the%20day%20before%20and%20can%20be%20fried%20just%20before%20serving.%20This%20kofta%20curry%20can%20be%20served%20with%20naan%20or%20roti%20or%20pulao.%20I%20made%20Bengali%20Mishti%20Pualo%20with%20vegetables%20to%20serve%20with%20the%20curry.%3C/p%3E%3Cp%3ERecipe%20from%20Sandeepa's%20Bongmom%20Cookbook:%3C/p%3E%3Cp%3EEnchor%20Kofta%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EFor%20the%20Koftas:%3C/p%3E%3Cp%3E1%20can%3C/p%3E%3Cp%3EGreen%20Jackfruit,%20drained%20and%20rinsed%20well%3C/p%3E%3Cp%3E2%3C/p%3E%3Cp%3EMedium%20Potatoes%3C/p%3E%3Cp%3E1%3C/p%3E%3Cp%3EMedium%20Onion,%20finely%20chopped%3C/p%3E%3Cp%3E2%3C/p%3E%3Cp%3EGreen%20Chilies,%20finely%20chopped%3C/p%3E%3Cp%3E1tsp%3C/p%3E%3Cp%3EGinger+garlic%20paste%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3EMake%20Kofta:%20Pressure%20cook%20jackfruit%20and%20potato%20until%20tender,%20about%203~4%20whistles.%20Let%20the%20pressure%20come%20down,%20then%20drain%20the%20excess%20water%20from%20the%20veggies%20and%20mash%20them%20well%20with%20a%20potato%20masher%20or%20simple%20blend%20it%20in%20the%20blender.%3C/p%3E%3Cp%3EHeat%202tsp%20oil%20in%20a%20nonstick%20pan,%20add%20the%20finely%20chopped%20onion,%20green%20chili%20and%20cook%20till%20the%20onion%20turns%20lightly%20browned%20around%20the%20edges.%3C/p%3E%3Cp%3ENext%20add%20the%20ginger+garlic%20paste,%20red%20chili%20powder%20and%20cook%20for%201%20minutes.%3C/p%3E%3Cp%3EAdd%20the%20mashed%20potato~jackfruit%20mixture%20and%20season%20with%20salt%20and%20garam%20masala.%3C/p%3E%3Cp%3ECook%20for%205~7%20minutes%20until%20the%20mixture%20becomes%20dry%20and%20starts%20to%20pull%20away%20from%20the%20pan.%20Taste%20and%20adjust%20the%20seasonings.%20Turn%20off%20the%20heat%20and%20let%20the%20mixture%20cool.%3C/p%3E%3Cp%3EOnce%20cool,%20divide%20the%20mixture%20into%20equal%20size%20balls.%3C/p%3E%3Cp%3EHeat%20oil%20in%20a%20pan%20and%20deep%20fry%20the%20koftas%20on%20medium%20heat%20until%20nicely%20browned%20all%20over.%20Remove%20onto%20a%20paper%20towel%20lined%20plate%20and%20set%20aside.%3C/p%3E%3Cp%3EMake%20the%20Gravy:%20Heat%202tsp%20oil%20in%20a%20pan,%20add%20the%20onion%20and%20cook%20till%20lightly%20browned%20around%20the%20edges.%20Take%20off%20the%20heat%20and%20let%20cool,%20then%20grind%20to%20a%20paste.%3C/p%3E%3Cp%3EHeat%202tbsp%20oil%20in%20a%20pan.%20Add%20the%20bay%20leaf,%20cardamom,%20grated%20ginger%20and%20cook%20till%20fragrant,%20about%2030seconds%20to%20a%20minute.%3C/p%3E%3Cp%3EAdd%20the%20onion%20paste%20and%20cook%20for%202~3%20minutes.%3C/p%3E%3Cp%3ENext%20add%20the%20tomato%20puree,%20tomato%20paste%20and%20cashew%20(or%20almond)%20butter.%20Cook%20till%20the%20oil%20starts%20to%20separate%20around%20the%20edges,%20about%204~5%20minutes.%3C/p%3E%3Cp%3EAdd%20the%20red%20chili%20powder,%20coriander%20powder,%20cumin%20powder%20and%20turmeric%20cook%20for%20a%20minute.%3C/p%3E%3Cp%3ENext%20add%20enough%20water%20to%20get%20to%20desired%20consistency%20and%20let%20the%20gravy%20come%20to%20a%20boil.%20Season%20with%20salt%20and%20sugar%20(if%20using).%20Finally%20add%20the%20cream%20and%20cook%20for%201~2%20minutes.%3C/p%3E%3Cp%3ETo%20Serve:%20Place%20the%20gravy%20in%20a%20serving%20bowl%20and%20add%20the%20koftas%20to%20it.%20Serve%20with%20roti%20or%20rice.%20I%20served%20this%20with%20some%20Bengali%20Vegetable%20Pulao.%3C/p%3E%3Cp%3ECheck%20out%20the%20Blogging%20Marathon%20page%20for%20the%20other%20Blogging%20Marathoners%20doing%20BM%23%2063%3C/p%3E){kind=link}
