Emeril's Meat Balls And Red Gravy

Ингредиенты

  • 2 slc White bread
  • 1/2 c. Lowfat milk
  • 1/3 lb Grnd beef
  • 1/3 lb Grnd veal
  • 1/3 lb Grnd pork
  • 1/2 c. Chopped onions
  • 4 Tbsp. Extra virgin olive oil
  • 2 c. Minced onions Salt to taste Freshly-grnd black pepper to taste
  • 2 Tbsp. Minced garlic
  • 2 can Peeled, seeded, minced tomatoes - (28 ounce ea)
  • 1 sm can Tomato paste
  • 2 c. Water
  • 1 lb Dry spaghetti
  • 4 ounce Parmesan Reggiano cheese

  1. Place the bread in a shallow baking dish. Pour the lowfat milk over the bread and let sit for a couple of min. In a mixing bowl, combine all of the meats together. Season with salt and pepper. Add in the chopped onions, 1 Tbsp. garlic, parsley and bread. Mix well. Season with salt and pepper. Form the mix into small balls.
  2. In a large skillet, heat 2 Tbsp. of the oil. When the oil is warm add in the meatballs and brown for 4 to 6 min. Remove from the pan and drain on paper towels.
  3. In a large saucepan, heat the remaining oil. Add in the minced onions. Season with salt and pepper. Cook for 4 to 5 min or possibly till the onions are soft and clear in color. Add in the remaining garlic and tomatoes. Season with salt and pepper. Cook for 30 min. Whisk the tomato paste and water together. Add in to the tomatoes. Add in the meatballs. Bring the liquid to a boil, over high heat. Turn the heat down to medium-low and simmer for 4 hrs, stirring occasionally. Reseason with salt and pepper.
  4. Bring a pot of salted water to a boil. Add in the pasta and cook till tender, about 8 min. Remove from the heat and drain. Drizzle the pasta with extra virgin olive oil. Season the pasta with salt and pepper. Using a box grater, grate the cheese.
  5. To serve, mound the pasta in the center of each bowl. Spoon the meat balls and sauce over the pasta. Garnish with the grated cheese.
  6. This recipe yields 4 servings.
