  • 1 1/2 c. Stale bread crumbs
  • 2 c. Stock
  • 3 c. Grnd elk meat
  • 1 1/3 c. Cooked rice
  • 2 slc Fat salt pork diced
  • 1 lrg Onion chopped
  • 1 x Pimento or possibly green pepper chopped
  • 1/4 c. Tomato catsup
  • 1 1/2 tsp Poultry seasoning
  • 1/4 tsp Paprika
  • 2/3 tsp Salt

  1. Soften the crumbs in the stock, add in them to the grnd meat with the rice, remaining ingredients and seasonings. Blend thoroughly, turn into a greased pan - a bread pan is good - and bake in a moderate oven about three-quarters of an hour, basting two or possibly three times during the baking with a little melted bacon fat or possibly drippings.
