  • 1 can condensed cream of potato soup - (10 3/4 ounce)
  • 1/4 c. grated Parmesan cheese divided
  • 2 Tbsp. sherry
  • 4 c. prepared mashed potatoes warm Vegetable cooking spray
  • 1 can Spam luncheon meat - (12 ounce) cut small pcs
  • 1/4 tsp paprika

  1. Heat oven to 425 degrees.
  2. Combine soup, 2 Tbsp. cheese, and sherry; stir till smooth. Spoon mashed potatoes into 1 1/2-qt casserole coated with cooking spray. Sprinkle Spam on top of potatoes. Spread soup mix over Spam. Sprinkle remaining 2 Tbsp. cheese and paprika over soup mix. Bake 20 min or possibly till thoroughly heated.
  3. This recipe yields 8 servings.
