Sometimes my husband will look over at me and say “Let’s go out to eat. I don’t feel like cooking.”

And I give him a look: You don’t feel like cooking?

I have been playing and replaying this meal in my head since I awoke at 4:30am when the cat smacked me in the eye for breakfast. ‘Ready’ doesn’t describe how badly I want this meal.

You don’t cook; I do!

All the decent restaurants are at least 30 minutes away from our farm – by the time we get to civilization, dinner will be on the table!

He’s learned that “I don’t feel like cooking” is a pretty good way to get me in the kitchen in the blink of an eye – that’s no excuse to go out to eat.

Sometimes he’ll say “There’s nothing to eat in the house!” in order to get me in the car to go out for dinner.

I meal planned, honey, so I know there’s food for us.

Give me 5 minutes and I can pretty much turn any ingredient into dinner.

One thing my husband does not like is breakfast for dinner, the easiest thing to make when you don’t feel like cooking or there’s nothing to eat in the house. It is a good thing that in the Omnivore’s mind the spicy beans cancelled out the eggs here.

In true Omnivore form he cringed when he saw the eggs sitting on the counter waiting to be cooked. I told him what was on the agenda and I received a polite ‘oh’ and he walked away. But after his first bite, he gave me the signal which pretty much means he’s in love with the meal by asking, “Are there leftovers?”

Baked Eggs with Spicy Beans (adapted from Fuss Free Cooking).

Ingredients

Instructions

Heat a large saucepan and spray with cooking spray. Saute onion and bell pepper until soft, about 5 minutes.

Add garlic and chilli flakes and saute until aromatic.

Add the beans followed by the chopped tomatoes and paprika.

Let it simmer over low-medium heat until it thickens, about 5 minutes.

Add chopped cilantro and simmer for 2 more minutes.

Adjust salt and pepper to taste.

Divide the bean mixture into the ramekins/dish or if your skillet is oven safe just keep it in there.

With a large spoon, make a dip in the sauce, then crack an egg into each one.

Put the ensemble under a broiler for 5 to 6 minutes until the eggs are done to your liking.
